A friend and I are doing a 30 day challenge and only eating healthy. Last night I wanted to make us a healthy meal as we were hanging out. I created this recipe. It is delicious and very easy.
2 or 4 boneless skinless chicken breasts cut in half lengthwise. Pound them flat with a meat mallet.
In a pan with 2 – 3 tbsp of olive oil, saute chopped red onion and cremini mushrooms or any kind you like – I wanted to try cremini. Cook for 5 – 6 minutes.
Spoon the mushroom & onion mixture on one side of the chicken season with salt,pepper and coconut thai spice….or whatever you like. Sprinkle with grated Asiago cheese or whatever kind you prefer.
Place the other side of the chicken on the top like a sandwich. Squeeze cilantro from the tube onto the top of the chicken breast and spread evenly covering the whole chicken piece.
Preheat the oven to 350 degrees and place chicken in a greased baking dish. Cook for 20 – 22 minutes or until the juice runs clear.
