“Roasted Sweet Potatoes”
Sweet potatoes are one of my favorite side dishes and they are nutritious, delicious and easy to make.
Chop in cubes 1 – 2 large sized sweet potatoes
In a bowl pour ¼ c olive oil and 2 – 3 tbsps minced garlic, mix together with oil
Add potatoes, milled salt, cracked pepper and coconut Thai spice, toss together until potatoes are well covered.
Put in glass oven safe dish and bake at 350 degrees for 45 – 60 minutes or until edges are brown.
I often make this with my roasted chicken recipe and cook them both in the oven at the same time using both racks. I will increase the temperature to 375 degrees to bake both together.
