This Cherry Bread is easy and super delicious. I started making it last year for a friend who loves Cherry Bread. It has started a tradition with my friend Donna (she says I nailed it) and my husband Dave.
Preheat the oven to 350 degrees bake for 50 minutes. If your oven is hot adjust accordingly. Lower the temp to 325. I check to see how it is cooking after 30 minutes and then again after 15 minutes. When the top is split and just beginning to brown it is usually done. Insert a toothpick in the center, if it comes out clean and not gooey it is ready to remove from the oven. Cool on a baking rack in the pan for at least 30 minutes for easy removal.
1 bottle Maraschino Cherries – drain in a sifter or colander and reserve the liquid for later. Pat the cherries dry in paper towel and cut in half.
1/2 cup margarine or butter
3/4 c sugar
1 tsp vanilla extract
2 cups flour
1 tsp baking powder
1/4 tsp salt
Cream margarine and sugar together then add eggs and vanilla.
Sift the dry ingredients in a bowl, blend together and add to the sugar mixture.
Add 1/2 c cherry juice, blend, then add the chopped cherries. Blend all ingredients together well.
Pour into a glass loaf pan coated with margarine or butter.
Cherry Bread has a very festive look.
