“Quinoa Breakfast”
It has only been in the last couple of years that I discovered Quinoa (keen wah).
It is gluten free, a great source of protein, easy to prepare and tastes great hot or cold.
In this recipe it is served cold. I love this because I make a whole package at one time put it in the refrigerator for my breakfasts all week. It takes literally 2 – 3 minutes to put this together for a fabulously flavorful breakfast you can take on the go. It is both nutritional and easy.
Cook one package of Quinoa or follow cooking instructions if you buy in bulk. Makes 4 cups approximately. Let cool.
In a small container add 1/3 – 1/2 c cooked quinoa
Top with frozen or fresh blueberries.
Add a dollop or two of extra creamy greek yogurt
Add 7-8 pecans or walnuts on top
Drizzle with pure honey or pure maple syrup
Sprinkle with cinnamon.
So delicious and filling.
