Cauliflower Crust Pizza

This is the best tasting pizza…….EVER. It takes a little time to prepare the cauliflower but it is so worth the effort. I prepare the cauliflower ahead and use it when I am ready to put the pizza together….usually one hour before I want to eat.

Pizza crust

1 cauliflower – cut off florets and put in a mixing bowl

Toss with olive oil, salt & pepper.

Put cauliflower on a greased baking sheet, bake at 350 degrees for about 20 – 25 minutes, when the florets are getting brown on the edges and it is soft enough to poke with a fork it is done.

Let cool for 10 minutes and put in the food processor.

In a mixing bowl combine the cauliflower, one egg, minced garlic, Thai coconut spice and milled salt and pepper, (you can use whatever spices you prefer) always make the recipe your own.

Grease a pizza pan or cookie sheet with olive oil or coconut oil. Press crust into pan and bake at 350 degrees for 25 minutes or until it is brown.

You can either use all veggies or meat toppings. All the ingredients should be cooked before putting on the crust. I sauté my veggies,  chopped small (red onion, red, orange, and yellow peppers) for Veggie Pizza or (turkey burger, pepperoni and bacon for All Meat Pizza), in a pan.

Top crust with pizza sauce, whichever kind you prefer or you can make your own.

Place toppings over the sauce and sprinkle cheese over the toppings (I use Asiago or extra old cheddar).

Bake until cheese melts about 10 – 15 minutes at 350 degrees. Allow to cool for 10 minutes before serving.

This pizza is so delicious and filling! We love having leftovers for lunch the next day. It heats up beautifully in the microwave.
