Avacado Chicken Boats
This is one of my very favorite recipes, they are bursting with flavour!
You can use precooked chicken from the grocery store (strips of white meat with seasoning) or I bake chicken for this recipe (my baked chicken recipe). Chop the chicken when it is still warm for added flavor.
One avocado is a good portion for one person. Ensure the avocado is not too soft or too hard by squeezing, if you can put a slight dent in the flesh it is ripe. When an avocado is black on the inside it has a very bitter taste. It should be all green on the inside for the most flavor.
Halve the avocado, remove the pit and scoop out the avocado with a spoon leaving it whole.
Place on the plate.
Squeeze fresh lime juice over the avocado halves.
Chop the chicken and mix in a bowl with some greek yogurt, salt, pepper, Thai coconut spice.
Add finely chopped red, yellow, orange peppers, and finely chopped red onion to taste.
Put the chicken mixture in each half of the avocado.
Squeeze more fresh lime juice over the top.
Sprinkle with grated Asiago cheese and chopped cherry tomatoes.
Close your eyes for the first bite! Delicious!
